INGREDIENTS
- 4 egg whites
- 1/4 cup diced green peppers
- 1/4 cup diced onion
- 1/4 cup diced tomatoes
- 1/4 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil for cooking
- Whole grain toast
- Heat a frying pan over medium heat and add a little olive oil.
- Sauté the diced green peppers and onions until they are softened.
- In a bowl, whisk the egg whites until frothy.
- Pour the whisked egg whites into the pan with the peppers and onions.
- Stir continuously to scramble the eggs and mix them with the vegetables.
- When the eggs are almost cooked, add the diced tomatoes and shredded mozzarella cheese.
- Continue cooking and mixing until the cheese is melted and the eggs are cooked to your desired consistency.
- Season with salt and pepper to taste.
- Serve hot over buttered whole grain toast.
